MUFFINS (FRENCH PUFF) 
1/3 c. butter, softened slightly
1/2 c. sugar
1 egg

1 1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg

Sift together, then stir in alternately with 1/2 cup milk, beginning and ending with flour. Bake in 350 degree oven for 20-25 minutes until light golden brown and toothpick comes out clean. Makes about 12 medium or 8 large.

BLUEBERRY OR HUCKLEBERRY MUFFINS:

Add 1/2 cup berries to previous recipe.

CORNMEAL MUFFINS:

Substitute 1/2 cup cornmeal for 1/2 cup flour in previous recipe.
