PEACH - GLAZED CORNED BEEF | |
3 lb. piece of corned beef 1 bay leaf 1 (1 lb. 13 oz.) can peach halves 1/4 c. brown sugar 1/4 c. catsup 2 tbsp. vinegar 2 tbsp. prepared mustard Place corned beef in heavy saucepan; add water to cover. Add bay leaf; cover and simmer 2 1/2 to 3 hours or until meat is tender. Remove from heat; cool meat in cooking liquid. Remove meat; slice across grain. Arrange slices, overlapping in 12 x 7 1/2 x 2 inch baking dish. Drain peaches, reserving 1/4 cup syrup. Arrange peaches around meat. Combine reserved syrup and remaining ingredients; pour over meat. Bake in moderate oven (350 degrees) for 1 hour, basting with the sauce occasionally. Makes 6 servings. Can cook meat day before and refrigerate before slicing. |
