GERMAN POTATO SALAD 
8-10 med. potatoes
3/4 c. sugar
1 heaping tbsp. cornstarch
2/3 c. vinegar
2/3 c. water
1 onion
1 lb. bacon

Slice cold boiled potatoes thin. Salt and pepper them. Chop 1 onion and cook in bacon drippings. Add cornstarch to sugar and mix. Add vinegar, water and sugar mixture to bacon and onion. Cook until clear and thickened, taste, season to taste with salt and pepper. Pour hot mixture over potatoes and lift through. Let stand several hours or overnight. Heat before serving.

Serves 12.
