SAUSAGE-BEAN ONE-DISH MEAL | |
1 c. dried lg. lima beans 3 c. water 1 lb. bulk pork sausage 1/2 c. chopped onion 1/2 c. chopped celery 1/4 c. chopped green peppers 1/2 c. tomato sauce 1/4 tsp. salt 1/8 tsp. pepper 1 (16 oz.) can whole tomatoes, undrained and coarsely chopped Sort and wash beans; place in large saucepan with 3 cups water. Bring to boil, cook 2 minutes. Remove from heat; cover and let soak for 1 hour. Place beans over medium heat; cover and simmer 1 hour or until tender, adding more water if needed. Combine sausage, onion, celery and green peppers in large skillet; cook until sausage is browned, stirring to crumble. Drain off pan drippings. Add beans, tomatoes, tomato sauce and seasonings; stir well. Spoon into a lightly greased shallow 2 quart casserole dish. Bake in 350 degree oven for 20 minutes. |
