DELICIOUS WAFFLES 
1 3/4 c. flour
1 tbsp. baking powder
1/2 tsp. salt
2 eggs, separated
1 3/4 c. milk
1/2 c. oil (optional)
1/2 tsp. cinnamon (optional)

Mix dry ingredients. Beat egg whites until stiff; set aside. Mix egg yolks, milk, and oil into dry ingredients; mix well. Fold in egg whites. Do not overmix.

Egg whites is what gives waffles their light and airy texture. Makes 6-8 waffles.
