GINGERBREAD COOKIES 
1 c. sugar
1 c. molasses
2 eggs
1 tsp. baking soda
1 tsp. cinnamon
6 or 7 c. flour (use 1/3 whole wheat)
3/4 c. oil or lard
1/2 c. hot water
1/2 tsp. salt
1 heaping tsp. ginger

Combine first four ingredients. Add eggs. Mix together the soda, cinnamon, salt, ginger and flour. Then add to first ingredients. Refrigerate dough. Roll out and cut with cookie cutter. Bake at 350 degrees for 10 minutes.
