CRISPY GINGERBREAD COOKIES 
5 1/2 c. sifted flour
1 tbsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. ginger
1 c. shortening
1 c. sugar
1 egg, beaten
1/2 tsp. vanilla
1 c. dark molasses
1/2 c. strong coffee

Sift together flour, soda, baking powder, salt, ginger and cinnamon. Cream shortening and sugar gradually; beat until light. Add eggs and vanilla. Add molasses and coffee, then sifted dry ingredients; mix well and chill.
