PICKLED BEETS 
1 can sliced beets
1 c. sugar
1 c. white vinegar
1 med. onion, sliced

Combine sugar and vinegar in a saucepan. Bring to a boil and stir. Pour over sliced beets and onions. Cool, then cover and store in refrigerator overnight before serving.
