PICKLED BEETS 
1 lb. cooked, sliced beets
3/4 c. reserved liquid
1/2 c. white vinegar
2 tbsp. sugar
1/2 tsp. ground ginger
1/2 tsp. ground allspice
1/4 tsp. salt
1 onion, sliced, separated into rings (opt.)

Combine beet liquid with vinegar and next 4 ingredients in saucepan. Bring to boil; pour over beets. Refrigerate overnight in covered bowl. Onion may be added just before serving. Makes 4 to 6 servings.
