MEATLESS RIGATONI 
1 (1 lb.) box rigatoni, cooked & drained
2 (10 oz.) pkgs. spinach, thawed & squeezed
1 lb. Mozzarella cheese, cubed
8 oz. cottage cheese
2 eggs, beaten
1 lg. jar spaghetti sauce (or 2 1/2 to 3 c. of your own)
1 tsp. garlic powder, or season to taste
1/2 tsp. pepper, or season to taste
1/2 tsp. salt, or season to taste
1/2 tsp. basil, or season to taste
1/2 c. Italian-seasoned bread crumbs
1/2 c. Parmesan cheese

Stir eggs into cottage cheese. Combine with rigatoni, spinach, cheese (cubed Mozzarella); add sauce and seasonings. Spoon mixture into a large casserole dish. Mix bread crumbs and Parmesan cheese and sprinkle over mixture. Bake, covered, for 30 minutes at 350 degrees, uncover, and bake for additional 15 minutes or until hot.
