BROCCOLI QUICHE 
2 (10 oz. each) pkgs. frozen broccoli
1 c. Bisquick baking mix
1 c. milk
2 eggs
1/2 tsp. salt
1 c. shredded sharp Cheddar cheese (4 oz.)
2 stalks chopped scallions

Heat oven to 325 degrees. Butter pie pan. Cook broccoli, drain. Beat baking mix, milk, eggs and salt with hand beater until smooth. Stir in broccoli, cheese and scallions. Pour into pie pan. Bake until knife inserted in center comes out clean, about 1 hour. Serves 6.
