ITALIAN VEGETABLE SOUP 
1 lb. Italian sausage
1 med. onion
1 can tomatoes
1 can garbanzo beans (drained)
1 can beef broth
1 1/2 c. water
2 med. zucchini squash
1/2 tsp. basil
Parmesan cheese

Brown sausage with onion. Stir into tomatoes, beans, broth, water, zucchini and basil. Simmer about 10-12 minutes. Sprinkle with cheese. Serve with croutons or French bread.

Italian sausage may be substituted with Polish sausage for a very hardy soup.
