CARROT CAKE 
1 1/4 c. vegetable oil
2 c. sugar
3 c. all-purpose flour
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
4 eggs
2 tsp. vanilla
3 c. grated carrots

Mix all ingredients together. Pour into lightly greased Bundt pan. Bake at 300 degrees for 1 hour and 10 minutes.

ICING:

1/2 stick butter (4 tbsp.)
1 (4 oz.) pkg. cream cheese
1/2 box powdered sugar

Cream butter and cream cheese together. Add powdered sugar. Beat together until light and fluffy.
