OLD FASHIONED HOT POTATO SALAD | |
2 lbs. unpeeled white potatoes 1/4 lb. sliced bacon 1/2 c. minced onions 1 1/2 tsp. flour 1 tbsp. sugar 1 tsp. salt 1/4 tsp. pepper 1/3 c. water 1/3 c. apple cider vinegar Cook potatoes, covered in boiling water, until just tender; about 35 minutes. Meanwhile, saute bacon in large fry pan until crisp; remove bacon and drain on paper towel. In same fry pan, make dressing. In 2 tablespoons of the bacon fat, saute the minced onions until tender, not brown. Mix together flour, sugar, salt and pepper; add water and vinegar. Stir until blended, then add to the sauteed onions. Simmer sauce mix until thickened, stirring often. Into dressing, slice peeled potatoes, then add cooked bacon. Note: Dressing may be made ahead of time and reheated to add potatoes. Goes with any meat. Recipe can be doubled. |
