CASSAVA CAKE 
4 c. grated cassava
2 1/2 c. coconut milk or heavy cream
1 1/2 c. turbinado
4 eggs
2 tbsp. butter
1/2 tsp. vanilla
Condensed milk for topping; optional

Melt butter. Beat eggs lightly. Mix all ingredients in a glass bowl thoroughly until well blended by hand. Bake in glass pan at 350 degrees about 1 hour. Cool. After 1 hour. Pour one can condensed milk on top or until cake is thoroughly glazed.

This is so delicious! I'd never tried cassava before and thought it smelled a little perfume-like so I went with this sweet recipe. I used regular American brown sugar and after I mixed everything in the bowl I used my immersion blender for a finer texture. Wonderful. Of coarse you add enough sugar to anything and it's bound to taste good.
