CANDIED SWEET POTATOES (YAMS)
6-8 medium-sized sweet potatoes
1 cup firmly packed brown sugar
1 to 3 tsp. ground cinnamon, or to taste
1 cup melted butter, plus 2 tbsp. melted butter
1-1/2 cups mini marshmallows
1/2 cup pecan chips

Slice sweet potatoes into 1/4 inch round slices. Arrange potatoes in a lightly greased baking dish (approx. 13”x9”x2”).

Mix brown sugar, cinnamon, and pecans in a bowl. Sprinkle each layer of potatoes with the mixture. Pour 3/4 cup melted butter over potatoes evenly. Cover and back at 375°F for 30 minutes.

Remove, and baste with remaining 1/4 cup butter. Cover and continue baking for 30 minutes. (If transporting dish, stop here and continue last step at remote location – warm 5-10 minutes in oven before adding marshmallows).

Remove, sprinkle marshmallows evenly on top and continue baking without cover for 5 minutes.

Awesome recipe! Changed it by using 1/2 cup butter and adding 1/2 cup orange juice instead. Baked 15 minutes longer. Yummy!

This is a great dish! Very easy to make.. One person was asking about the other 2 tbsp of butter.. where does it come in? I don't see that you need it anyway. 1 cup is plenty..In fact, I used Land O' Lakes stick margarine.. came out just as good. I also take maybe half a cup of the marshmallows and mix them in with the yams. When almost ready to serve I dump in rest of the bag and stick in oven a few minutes to brown tops of marshmallows! Yummy!

Everyone (even the ones who didn't normally like yams) LOVED this recipe. Both Grandma and Great Grandma asked for the recipe. I added the marshmallows before heading over and they melted most of the way, but it just made it even better.

I fixed this recipe for Thanksgiving dinner 2012. It was fantastic. I wanted a recipe that featured real (not canned) sweet potatoes, and that did not involve mashing the sweet potatoes. This was the perfect recipe! Just the right amount of sweet, crunch, and texture. Delicious!

We decided to make homemade yams this year because we got tired of having the mush that comes in a can. The BEST decision we could've made was using this recipe vs the others we saw. Very simple and delicious :-)
