HIGHLAND SCONES (Scottish) 
2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
1/3 c. shortening
2 eggs, slightly beaten
1/2 c. milk
2 egg whites, slightly beaten
Additional sugar

Sift together first 4 ingredients into a large bowl; cut in shortening until mixture resembles cornmeal. Add milk to 2 slightly beaten eggs; add egg mixture to flour mixture, stirring well to make a soft dough.

Turn dough out onto a lightly floured board; knead lightly. Roll dough out to 1/2 inch thickness; cut into 4 inch squares, or use the top of a household glass to cut out round circles in dough. If you cut 4 inch squares, cut the squares diagonally to form a triangle. Brush cut dough with beaten egg whites; sprinkle with additional sugar.

Place on greased baking sheet. Bake at 425 degrees F. for 12 to 15 minutes. Yield: 10-12 scones. Preparation time 30 minutes.
