ITALIAN CHEESE PUFFS 
1 c. water
1/2 c. butter
1/2 c. plus 2 tbsp. all purpose flour
1/2 c. Italian style bread crumbs
1/2 tsp. salt
3 eggs
1/2 tsp. ground black pepper
6 oz. pkg. shredded mozzarella cheese
1 1/2 c. grated Parmesan cheese

In a medium sauce pan bring water and butter to a boil. Remove from heat. Stir in flour, bread crumbs, salt and pepper all at once. Cook and stir over low heat for 1 minute. Place mixture in large bowl of electric mixer. Add eggs one at a time, beat in well after each addition. Beat until mixture is smooth. Beat in mozzarella cheese. Drop mixture by the teaspoon or pastry bag fitted with a large star tube onto ungreased pan. Sprinkle tops with grated Parmesan cheese. Bake at 375 degrees until golden and puffed, about 15 minutes. Serve hot. Or cool on racks, freezer wrap and freeze until ready to reheat. To reheat, place frozen puffs on pans, bake at 375 degrees until hot, about 10 minutes.
