CHEESE PUFF 
8 slices bread
1/2 lb. cheese, grated (2 c.)
3 eggs
2 c. milk
Salt, pepper, paprika, dry mustard if desired

Arrange 4 bread slices in the bottom of a greased baking dish. Sprinkle with half the cheese and cover with remaining bread. Beat eggs, add milk and seasonings. Pour over the bread-cheese mixture and cover with remaining cheese.

Set baking dish in pan of hot water and bake in a moderate oven (375 degrees) 40 minutes or until the custard is set and bread is set.

Good lunch or brunch dish!
