ZUCCHINI MEAT LOAF 
1 1/2 c. zucchini, grated
1 lb. turkey, ground
1 med. onion, chopped
1/2 c. red and green peppers, chopped
2 c. bread crumbs
1 egg white
1 (6 oz.) can tomato paste
1 tbsp. parsley
1 tsp. tarragon
1 tbsp. basil
1/2 tsp. black pepper
1 c. cheddar cheese, grated

Preheat oven to 350°F. Prepare loaf pan with cooking spray. In a mixing bowl, combine zucchini, turkey, onion, peppers, bread crumbs, egg white, tomato paste, parsley, tarragon, basil, and black pepper. Press mixture into prepared pan and cover with foil. Bake for 1 1/4 hours. Sprinkle cheese over the top. Return to oven and bake another 10 minutes.
