VEGGIE CASSEROLE 
1 (10 oz.) pkg. frozen chopped broccoli
1 (10 oz.) pkg. frozen cauliflower florets
1 c. crushed Saltine crackers
1/2 c. sour cream (4 oz.)
1/2 c. cottage cheese (4 oz.)
1/2 c. condensed cream of mushroom soup
3 tbsp. minced onion (optional)
1/3 c. shredded cheddar cheese

Place frozen broccoli and cauliflower in separate microwaveable bowls and microwave on high for 15 minutes. When cool enough to handle, chop cauliflower into small pieces. Preheat oven to 350 degrees. Coat 8 or 9 inch round or squash pan with baking spray. In a large bowl, mix the crushed Saltines, sour cream, cottage cheese, mushroom soup, and onion (if using). Put broccoli and cauliflower in pan and cover with sour cream mixture. TOP with grated cheese and bake for 30 minutes, or until cheese is melted and bubbly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
