FRIED POTATOES AND ONIONS 
2 large onions, chopped
6 potatoes, chopped
1 tbsp. olive oil

Place chopped potatoes in microwave dish. Cover and cook until done. May need to stir occasionally to separate since they are dry. Meanwhile, sauté onions on low heat in olive oil until desired doneness; we like ours crisp. When potatoes are done, pour off any liquid that may have cooked out. Turn burner to medium high heat. Add potatoes to onions and brown. Delicious and great without all the fat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
