SPINACH MACARONI CASSEROLE 
2 c. cooked macaroni
1 (10 oz.) pkg. frozen spinach, cooked
2 tbsp. butter
6 oz. Ricotta cheese
1/4 c. Parmesan cheese
1 or 2 eggs (or egg substitute)
Salt to taste
Pepper to taste
Mozzarella cheese for topping

Combine Ricotta cheese, eggs, Parmesan cheese and butter. Mix spinach and macaroni together. Add cheese mixture and stir well. Place in casserole. Sprinkle with Mozzarella cheese on top and cook at 350 degrees until bubbly.
