PEANUT BUTTER COOKIES 
1/2 c. butter
1/2 c. white sugar
1/2 c. brown sugar (without lumps), firmly packed
1 egg
1 c. peanut butter
1/2 tsp. salt
1/2 tsp. vanilla
1 1/2 c. all-purpose flour
1/2 tsp. baking soda

Work the butter with a spoon or by hand until soft, but not oily. Gradually add white and brown sugars. Cream these ingredients with a slotted spoon or by hand until they are light and fluffy, like whipped cream. Beat in egg, peanut butter, salt, and vanilla with a spoon. Sift flour and baking soda once into a sifter that has been placed on a plate or a piece of stiff paper. Re-sift these ingredients. Stir the sifted ingredients slowly into the other mixture with a spoon. Stir or work them with a lightly floured hand until they are blended. Remember to add the flour on the plate or paper. Roll the dough into 1 inch balls. Place them on a greased cookie sheet. Press them flat with a fork. Bake the cookies in a heated 375 degree oven for 15 minutes. Remove them from the pan while hot and place them onto a cookie rack to cool.
