POTATO FILLING | |
8 lb. potatoes 2 loaves bread, cubed 1 pt. milk 6 eggs 1/2 Bermuda onion, chopped 1/2 lb. butter Salt, pepper, parsley Cook potatoes, then mash. Fry onions in butter and mix with bread cubes. Beat eggs and milk together and add to mashed potatoes. Add bread cubes, salt, pepper and parsley. Stuff poultry with the filling or bake it in casseroles. Add poultry drippings to casseroles if desired. This filling won unanimously over bread and chestnut stuffing in our family. It usually is considered the main course, with the turkey as a side dish. Leftovers, if any, freeze well. |
