MEXICAN MANICOTTI 
1 can refried beans
1-1 1/2 lbs. hamburger
1 tsp. crushed oregano
1/2 tsp. cumin
1 (8 oz.) jar taco sauce
1 c. grated Monterey Jack cheese (or more)
2 c. sour cream
1 can black olives, sliced
1/2 c. green onions, diced
8-10 manicotti shells
1/2 c. water

Preheat oven to 400 degrees. Mix 3/4 can of refried beans, hamburger, oregano and cumin. Fill manicotti shells. Line baking dish with single layer of shells. Leftover mixture can be placed in corner of dish to bake.

Mix taco sauce and water, pour over manicotti shells. Bake for 3/4 hour - then turn shells for 20 minutes more of baking. Then mix sour cream, olives and green onions. Pour over baked shells. Cover with cheese and return to oven to melt the cheese. Approximately 8 minutes.

Serve with salad - a full meal! Start to finish - including clean up time - 1 1/2 hours!!
