PINEAPPLE CAKE (LOWFAT) 
2 eggs
2 c. sugar (or less, cut by 1/3)
1 can crushed pineapple, undrained
1/2 tsp. salt
1 tsp. vanilla
2 tsp. baking soda
2 c. flour
1/2 c. nuts, chopped (pecans or walnuts)

Mix all ingredients and pour into large cake pan, greased and floured. Bake at 350 degrees for 30-35 minutes.

FROSTING:

1 (8 oz.) cream cheese
1 tsp. vanilla
1/2 c. butter
1 3/4 c. powdered sugar

Mix until fluffy and frost cooled cake.
