JAPANESE SALMON WITH SESAME
SEEDS
 
12 slices salmon, about 2 to 3 ounces
1/2 c. to mari soy sauce
1 hot chili pepper, seeded and finely minced
1 tsp. honey
1 tsp. vinegar
2 tbsp. sesame oil
3 tbsp. sesame seeds, toasted
2 scallions, green part only, thinly sliced

Place salmon in marinade made by mixing soy sauce, hot pepper, honey, vinegar, and 1 tbsp. sesame oil and allow to marinate for 2 hours. Lift fish from marinade, and dry well on paper towels.

Heat remaining sesame oil in skillet. Add salmon scallops and saute quickly, turning once, about 2 minutes on each side. Sprinkle with sesame seeds and scallions.
