SLOW COOKED PEPPER STEAK 
1 1/2 to 2 lb. beef round steak, cut into 3 x 1-inch strips
2 tbsp. oil
1/4 c. soy sauce
1 c. chopped onion
1 clove garlic, minced
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground ginger
4 tomatoes, cut into eighths or 1 (16 oz.) can tomatoes, cut up
2 large green peppers, cut into strips
1/2 c. cold water
1 tbsp. cornstarch

Brown strips of beef in oil in skillet. Place in slow cooker. Combine next 7 ingredients and pour over beef. Cover and cook on low 5 to 6 hours or until tender. Add tomatoes and green peppers. Cook on low 1 hour longer. Combine cold water and cornstarch to make a paste. Stir into liquid in slow cooker and cook on high until thickened. Serve over noodles or rice.

Serves 6 to 8.
