CREAMY SPINACH & TORTELLINI 
1 lb. fresh or frozen cheese tortellini
1/2 c. chopped onion
1 garlic clove, minced
2 tbsp. olive oil
9 oz. frozen chopped spinach, thawed
1 c. chopped tomatoes
1/4 c. chopped fresh basil (or any basil to taste)
1/2 tsp. salt
1/2 tsp. pepper
1 c. whipping cream
1/4 c. grated Parmesan or Romano cheese

Cook tortellini as directed; drain; rinse with hot water; reserve.

In large skillet on medium heat, cook onion and garlic in olive oil until lightly browned. Add spinach, tomato and spices; cook 5 minutes, stirring occasionally. Stir in whipping cream and grated cheese. Cook until mixture comes to a boil. Reduce heat to low. Add tortellini, mixing well. Cook 4 to 5 minutes or until well heated. Serve with additional cheese, if desired. Makes 4 servings.
