CARROT RAISIN SALAD 
1/2 c. raisins
1 1/4 grated raw carrot
1/4 c. mayonnaise
1 tsp. sugar
1/4 tsp. salt
1 tbsp. lemon juice

Pour boiling water over raisins to cover, let stand 5 minutes, drain and cool. Add grated carrots. Combine mayonnaise with lemon juice, sugar and salt. Toss with carrot mixture. Refrigerate before serving.
