CREAMY VEGETABLE CAPELLINI 
2 tbsp. vegetable oil
1/4 c. minced onions
1/2 pkg. fresh mushrooms or 1 sm. can, drained
2 carrots, thinly sliced
2 yellow squash, thinly sliced
2 zucchini, thinly sliced
1 c. chicken broth (MBT)
8 oz. capellini
1 (8 oz.) pkg. cream cheese, cut in sm. chunks
1/3 c. Parmesan cheese

In large pan, stir fry vegetables, approximately 3 minutes over medium heat. Add chicken broth and simmer 5 minutes.

Meanwhile, cook capellini according to package. Add cheese chunks to vegetable mixture, stir to melt. Add Parmesan and blend together. Drain pasta and pour over top. Serve hot.
