CRUMB - TOP BANANA BARS 
1/2 c. shortening or butter
1 1/2 c. sugar
2 eggs, well beaten
1 c. banana pulp (3 med.)
1 tsp. vanilla
1/3 c. milk plus 2 tbsp. vinegar & 1 tsp. baking soda

Cream shortening and sugar. Add eggs and vanilla, beating until fluffy. Beat in banana pulp. Add flour and salt alternately with vinegar, soda and milk mixture. Beat well. Pour into an 11 x 16 inch baking pan. Sprinkle batter with the following topping.

TOPPING:

1 c. crushed rice cereal or corn flakes
1 c. brown sugar
1/2 c. flour
1/2 c. butter, softened

Mix the first 3 ingredients, then add softened butter and mix until crumbly. Sprinkle evenly over batter. Bake at 350 degrees for 35-40 minutes.
