CHICKEN NEOPOLITAN 
1 1/2-2 lb. boneless chicken tenders
1 green pepper, sliced
1 sm. onion, sliced
1 c. mushrooms, sliced
4 oz. mozzarella cheese, grated
1 tsp. crushed red pepper
1 lg. jar commercial spaghetti sauce
1 can chunky stewed tomatoes
1 lb. spaghetti, cooked

Place chicken on bottom of baking dish (9 x 12 inch). Layer green pepper, onion and mushrooms. Cover with spaghetti sauce and tomatoes. Sprinkle with crushed red pepper. Bake at 325 degrees for 40 minutes. Top with cheese and continue baking until cheese is melted. Serve over prepared spaghetti. Serves 4-5 adults.
