AUNT VIRGINIA'S APPLE PIE 
CRUST:

1/2 c. solid shortening (Crisco)
1 1/2 c. flour
Pinch of salt, nutmeg
1/4 c. cold water

Combine all ingredients and blend well. You should have a smooth, pliable dough. Roll out half of the dough and place in a 9-inch pie plate.

FILLING:

6 lg. Granny Smith or Delicious apples
Cinnamon, nutmeg, and allspice to taste
2 tbsp. lemon juice
1 stick butter
1 1/2 c. sugar

Core, peel and slice apples. Combine apples with 1/4 cup water. Cook on a low flame until medium soft, but not mushy, add the other ingredients. Now here's the secret part of the procedure: Lift the apples from the saucepan. Put them into the pie plate. Let the liquid in the saucepan cool off.

To the cooled liquid, add 1 box of My-T-Fine vanilla pudding mix (regular not instant). Blend thoroughly, pour over apples.

Now, roll the remainder of the dough, put on top of the filling, and seal. Bake in a 350 degree oven for 20-30 minutes or until golden brown.
