ITALIAN SAUSAGE & EGGPLANT 
Peel and cut into 1 inch cubes 1 egg plant. Sprinkle with salt and drain on paper towel 30 minutes. Oil pan lightly and place eggplant cubes in pan.

Cut up 1 pound of sausage meat into 3 inch pieces, remove casing. Put on top of eggplant.

Cut up 2 green peppers. Put on top of sausage.

Slice 2 tomatoes. Put on top of peppers.

Pour 1/4 cup olive oil over layers. Add 1 teaspoon oregano and 1 teaspoon rosemary. Add salt and pepper to taste and put 3 tablespoons of onion on top.

Bake at 375 degrees for 20 minutes. Take out of oven. Pour 1/2 cup of wine on top, 2 crushed garlic cloves, and sprinkle with parsley.

Bake for 20 more minutes.
