ZUCCHINI CASSEROLE 
1 lg. zucchini or 4-5 sm. ones
1 lb. bulk sausage or hamburger
1/4 c. chopped onions
1/2 c. cracker crumbs
1 beaten egg
1 c. Cheddar cheese cubes
1/4 tsp. salt
1/4 tsp. oregano
Dash garlic salt
Dash pepper

Cut zucchini lengthwise and remove seeds. Peel and dice. Cook meat and onion; drain off fat. Stir in remaining ingredients. Place in greased 2 quart casserole. Sprinkle with grated Parmesan cheese if desired. Bake 25-30 minutes at 350 degrees or until zucchini is tender.
