ZUCCHINI CASSEROLE | |
2 frying zucchinis 1 (1 lb. 14 oz.) jar Prego spaghetti sauce with mushrooms 1 lg. bag Mozzarella cheese 3 eggs 1/3 c. milk 1 1/2 c. flour 3 sticks butter 1/4 lb. hamburger, fried, drained and mixed with sauce (optional) Cut zucchini into 1/4 inch slices and dip in batter consistency of 3 beaten egg and 1/3 cup of milk. Then dip slices in flour and brown on both sides in butter. Drain slices on a paper towel and set aside. Take a 12 x 12 inch cake pan and coat the bottom with Prego spaghetti sauce. Put a layer of zucchini slices on top of this sauce and sprinkle with mozzarella cheese. Then cover with more Prego and repeat until all slices of cheese and sauce are coated. The top layer should be spaghetti sauce with a light cheese coating. Bake at 400 degrees for 35 minutes. Take out and let set for 15 minutes then cut and serve. |
