HOT TURKEY SALAD 
4 c. diced turkey
4 c. diced celery
4 hard cooked eggs, chopped
2 tbsp. lemon juice
1 c. grated cheese
1 tbsp. chopped onion
1/2 c. sliced almonds
1 1/2 c. mayonnaise
1 c. grated cheese
1 1/2 c. crushed potato chips
1/2 tsp. salt

Cut cooked turkey (chicken may also be used) into large pieces. Add celery, eggs, salt, onion, 1 cup grated cheese, lemon juice and mayonnaise and mix well. Refrigerate overnight. Before baking, add almonds. Put salad into 2 1/2 quart baking dish and sprinkle with remaining cup of grated cheese (cheddar is preferred). Top with crushed potato chips. Bake in 400 degree oven for 25 minutes. Serves 12.
