RITZ CRACKER PIE 
3 egg whites
1 cup sugar
1 tsp. baking powder
20 Ritz crackers (crushed fine)
1/2 cup chopped pecans
1 tsp. vanilla

Beat egg whites to soft peaks, gradually adding sugar. Mix together baking powder, cracker crumbs, pecans and vanilla. Fold into beaten egg whites. Pour into a greased 9 inch pie plate.

Bake at 350°F for 30 minutes. Serve with whipped cream or ice cream.

Serves 6-8.
