SAVORY GOULASH 
1 tbsp. butter
2 tbsp. oil
1 lb. cubed beef stew meat
2/3 c. halved and sliced onion
1 tbsp. paprika
1/4 tsp. black pepper
1 c. sliced green pepper
28 oz. can Italian plum tomatoes, drained
4 c. boiling water
1 sm. ham bone (optional)
1 1/2 tsp. salt
1/2+ lb. smoked sausage, sliced
3/4 lb. cooked wide egg noodles

In a Dutch oven, heat butter and oil and brown beef over medium-high heat, in batches. Using a slotted spoon, transfer to a bowl and set aside. Add onion to the pot and cook until browned, stirring frequently. Stir in paprika and black pepper and cook 2 minutes. Add green pepper, tomatoes, water, ham bone, salt and sausage. Return beef to pot and simmer for 2 hours over low heat. Degrease and serve on a bed of hot egg noodles. Yields 4 servings.
