SUMMER SAUSAGE 
5 lbs. hamburger
5-6 tsp. Morton Tender quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. pepper
1 tsp. hickory smoked salt

Day 1 - Mix hamburger with salt and spices. Cover and refrigerate.

Day 2 - Mix well by hand and refrigerate.

Day 3 - Mix same as day 2.

Day 4 - Form into 5 rolls and place on broiler rack pan. Bake on bottom rack of oven for 4-4 1/2 hours at 170 to 180 degrees. Turn rolls every hour.
