STUFFED VEGETABLES 
6 med. zucchini, halved lengthwise or 1 lg. eggplant or 6 med. tomatoes
1/2 lb. sausage
1 sm. onion, chopped
1 clove garlic, crushed
1/3 c. pkged. Italian bread crumbs
1/4 lb. Mozzarella cheese, grated
1/4 c. grated Parmesan cheese

Cook zucchini in salted water that is boiling in a large skillet for 10 minutes. Drain and scoop out. Remove casings from sausage; break up meat, cook in skillet 5 minutes. Add onions, garlic and saute until tender (3 minutes). Stir in mashed zucchini and bread crumbs. Sprinkle with cheese and bake at 350 degrees for 30 minutes.
