2 lbs. hamburger 2 lg. cans tomato sauce 3 c. pinto beans 2 c. rice 1 bell pepper 1 can stewed tomatoes 3 tbsp. butter 2 lg. bags corn chips 3 med. onions 6 tomatoes 2 heads lettuce 1 lg. Cheddar cheese, (medium) Cook pinto beans and tomato sauce. When beans are almost cooked, add cooked hamburger and simmer meat and beans together for 30 minutes. Fry rice with butter, 1 onion, 1 bell pepper, until onions and bell pepper are cooked. Then add stewed tomatoes, cover and simmer until cooked. Cut tomatoes in small pieces, put in bowl. Shred the cheese, put in bowl, shred lettuce, put in bowl, cut leftover onions, put in bowl. Crush the corn chips. Now you're ready to fix your meal. Put a big helping on your plate of corn chips, then pinto beans, then rice, then some tomatoes, onions, lettuce; top with cheese. Serves 10 people. |
