ITALIAN DRESSING 
1/4 c. plus 2 tbsp. water
1/4 c. vinegar
2 tbsp. parsley, chopped
1 tbsp. Parmesan cheese
2 tbsp. vegetable oil
2 tsp. pectin
1/4 tsp. pepper
1/4 tsp. salt substitute
1/4 tsp. Italian seasoning
1 garlic clove, peeled

Combine all ingredients in a jar and shake except garlic. Press wooden pick through garlic. Add to dressing. When ready to use, discard garlic. Makes 3/4 cup.
