TACO SALAD 
1 lb. ground beef, browned
1/2 c. water
1 env. taco seasoning mix
2 pkg. yellow rice
1 lb. Velveeta cheese
1 can Old El Paso tomatoes & pepper
Tortilla chips

Add the taco seasoning mix to the ground beef while browning and also add the 1/2 cup of water. Cover and simmer for about 15 minutes. Cook yellow rice according to package directions. Melt cheese and El Paso tomatoes and pepper. Mix with the rest of the ingredients. Pour into oblong baking dish and crumble tortilla chips on top and brown in the oven for a couple of minutes.
