LESLIE'S ZUCCHINI | |
8-10 sm. zucchini, cut into 1/2 lengthwise and parboiled 5 minutes 1/2 c. butter, melted 1/2 c. grated cheddar cheese 1/2 c. sour cream 1/4 c. grated gruyere or Swiss cheese 1/2 tsp. salt 1/2 tsp. paprika 1 c. bread crumbs 1/4 c. grated Parmesan cheese 1/4 c. fresh chives, chopped Sprinkle greased pan with a generous layer of bread crumbs. Mix cheese, sour cream, salt, paprika, and chives. Place zucchini on crumbs, spread mix over top, top with crumbs and Parmesan cheese. Dribble butter on top. Bake at 350 degrees for 25 minutes. Serves 8-10. |
