DINNER - IN - A - PUMPKIN 
1 med. pumpkin
2 pkg. all-purpose ground beef mix
1/4 c. soy sauce
2 tbsp. packed brown sugar
1 (4 oz.) can sliced mushrooms, drained
1 (10 1/2 oz.) can condensed cream of chicken soup
2 c. hot cooked rice

Preheat oven to 375 degrees. Lightly grease a 10 inch circle in center of baking sheet; set aside. Cut out stem end of pumpkin. Reserve top of pumpkin. Remove seeds and pulp; custard.

Combine all of the above ingredients and spoon mixture into pumpkin. Replace top of pumpkin. Bake about 1 hour until pumpkin is tender. Makes 6-8 servings.
