LIME-PEPPER CHICKEN | |
1/2 tsp. finely shredded lime peel 1/3 c. lime juice 2 tbsp. cooking oil 1 tsp. dried thyme, crushed 1 tsp. cracked black pepper 1/2 tsp. garlic salt 2 - 2 1/2 lbs. meaty chicken pieces (breasts, wings, thighs, & drumsticks) For sauce, in a small mixing bowl, stir together lime peel, lime juice, cooking oil, thyme, pepper and garlic salt; set aside. Place chicken, skin side down, on an unheated rack in a broiler pan. Brush with sauce. Broil 4" to 5" from the heat for 15 to 18 minutes or until lightly browned, brushing often with sauce. Turn chicken and brush with sauce. Broil for 10 to 15 minutes more or until no longer pink, brushing often with sauce. Makes 4 servings. Per Serving: 284 calories, 33 g protein, 3 g carbohydrates, 15 g fat, 329 mg sodium. |
