LYNN'S HEALTHY CASSEROLE | |
3 eggs 6 tbsp. flour 10 oz. pkg. frozen chopped spinach, thawed 1 lb. (2 c.) lg. curd cottage cheese 1/2 lb. (2 c.) grated Cheddar cheese 1/2 tsp. salt 1/2 c. shredded Cheddar cheese for top Beat eggs and flour until smooth. Squeeze excess moisture from thawed uncooked spinach. Mix spinach and rest of ingredients to egg and flour mixture. Pour mixture into well-greased 2-quart casserole. Put additional shredded cheese on top. Bake uncovered at 350 degrees for 1 hour. Let stand for 10 minutes before serving. Makes 6 servings. |
